Ingredients (serves 2-4):

  • 150g porridge oats

  • 1 carrot

  • 1 apple

  • 1 banana (mashed)

  • 80ml milk (use oat milk)

  • 1 teaspoon of cinnamon

  • 1 teaspoon of turmeric

  • 1 tablespoon of maple syrup

  • Nut butter for drizzle


Prep time: 15mins

Equipment:

  • Food processor

  • Non-stick or lined baking tin

Method:

  • Preheat oven to 180Β°C

  • Process carrot, apple and 1/2 the oats (75g) in food processor and transfer to large mixing bowl Hint: Leave the skin on the apple for extra deliciousness!

  • Mash the banana with a fork and add it to the bowl along with the oats and oat milk

  • Add the cinnamon, turmeric and maple syrup and mix all ingredients together

  • Line a baking tin and pour in the mixture. Spread evenly, taking extra to fill all the corners

  • Place in the oven and bake for 20-25 minutes or until golden brown. Take them out of the oven and leave to cool

  • Once cooled, add a drizzle of melted nut butter

Hint:

For some extra plant nourishment, you might like to try adding different vegetables to the food processor: such as zucchini, spinach or squash! This makes for an even healthier alternative - and bonus - kids love it too!
