Try this delicious + healthy plant-based snack any time of the day! π±
Itβs quick and easy and great as an accompaniment with a warm cup of your favourite winter warmer! βοΈ π
Ingredients (serves 2-4):
150g porridge oats
1 carrot
1 apple
1 banana (mashed)
80ml milk (use oat milk)
1 teaspoon of cinnamon
1 teaspoon of turmeric
1 tablespoon of maple syrup
Nut butter for drizzle
Prep time: 15mins
Equipment:
Food processor
Non-stick or lined baking tin
Method:
Preheat oven to 180Β°C
Process carrot, apple and 1/2 the oats (75g) in food processor and transfer to large mixing bowl Hint: Leave the skin on the apple for extra deliciousness!
Mash the banana with a fork and add it to the bowl along with the oats and oat milk
Add the cinnamon, turmeric and maple syrup and mix all ingredients together
Line a baking tin and pour in the mixture. Spread evenly, taking extra to fill all the corners
Place in the oven and bake for 20-25 minutes or until golden brown. Take them out of the oven and leave to cool
Once cooled, add a drizzle of melted nut butter
Hint:
For some extra plant nourishment, you might like to try adding different vegetables to the food processor: such as zucchini, spinach or squash! This makes for an even healthier alternative - and bonus - kids love it too!
