It's wouldn’t be the [silly] holiday season without a delicious baked gingerbread delight…and even better yet, Gingerbread people doing Yoga poses! We just LOVE this recipe from @bakedideas by Patti Paige. 🎄🧘‍♀️🌱

Ingredients:

  • 1 x serve egg replacer (or flax egg)

  • 1/2 cup brown sugar

  • 1/4 cup almond butter

  • 3 tbsp molasses

  • 1/4 cup coconut oil (or nuttlex)

  • 1 tsp ground ginger

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg (optional)

  • 1/4 tsp salt

  • 1/2 tsp bicarbonate soda

  • 1 1/4 - 1 3/4 cups buckwheat flour (or gluten free flour substitute)

Method:

Preheat oven to 180C + the prepare egg replacer or flax egg and let sit for 5mins

Soften oil/butter and add to vegan egg mix.

Add all other ingredients except for flour and whisk until combined.

Fold in flour with a spoon and mix until dough holds its shape but isn’t too dry.

Chill in fridge for an hour (if you have the patience!).

Roll out dough between two pieces of parchment (maybe an extra sprinkle of flour) and cut into shapes.

Bake for 8-10mins until slightly brown on the edges.
